i am not a vegetarian

Let me just set that record straight right now.

I'll eat a piece of fried chicken in a heartbeat. I would choose Outback over Olive Garden any day of the week. I can't decide what I love more: cheeseburgers or hotdogs. You pick up what I'm puttin' down?

Remember how the hubs and I are trying out the "whole living" dealio? One way we're able to do that on the cheap [because hello, organic chicken costs like a billion dollars] is to cut back on the amount of meat we eat on a regular basis. Usually we eat it once or twice a week, but sometimes it's not at all.

When I first started cooking, that would not fly in my kitchen. I was all, meat-veggie-starch-meat-veggie-starch. But now that I've been adapting our menu to this new lifestyle/budget, I'm realizing how UN-boring it can really be. The opportunities are limitless.

One of our faves is flatbread [aka poor girl's pizza]. I make it with tomatoes, fresh basil and mozzarella. I make it with zucchini, parmesan and romano. I just love every single bite of every single kind of flatbread.

This week, I changed it up with a little swiss chard. Do you love swiss chard? If you don't, you should. It's yummy and pretty and you should love it because it's so good for you.

So here's the recipe:
  • 1 flatbread [see recipe in the link above]
  • 1 onion, diced
  • 1 bunch of swiss chard, chopped
  • Garlic [to your liking]
  • Basil and oregano [to your liking]
  • S&P
Sautee the onion in olive oil while you chop the swiss chard.
Add the swiss chard and add a good bit of salt to draw the bitterness out. If you think it's too much, don't worry because it's not.
Add garlic (I use about a tablespoon of minced)
Cook down until it's wilted.
Roll out flatbread dough and top with everything above.
Sprinkle the mozz and bake at 350 for about 15-20 minutes, until golden and bubbly and mmm!


You just slice that sucker up and enjoy some yummygoodforyou-ness. Do it.

  3. In January, after watching "Food Inc", we began changing the way we ate. That lasted about 3 mos and then we just slipped. We'll readily admit that we felt better when we were eating less meat and processed food, but we just can't seem to get back into it. I got lazy with cooking and I just can't stand how expensive it is to eat healthier. I think I just need to get a little more creative with eating this was frugally.   4. Yummy! We eat very similar-meat maybe once a month or so and meatless the rest. That flat bread looks yummy-I love swiss chard but never thought to combine the two. We'll have to give this a go!
